Herb and cottage cheese loaf

    self-raising flour

    grated Cheddar cheese
  • 1
    onion, finely grated
  • 3
    dried mixed herbs
  • 3
    freshly ground black pepper
  • 500
    creamed cottage cheese
  • 1
    extra-large egg, lightly whisked
  • egg and water, whisked together


Preheat the oven to 180 ºC and grease a 22 cm cake tin with butter or spray with non-stick spray. Sift the self-raising flour and salt together. Mix the cheese, onion, herbs and pepper together and add to the flour. Beat the cottage cheese and egg together lightly and add to the flour mixture. Mix lightly to form a manageable dough. Shape into about 12-15 balls and pack them tightly together in the prepared cake tin, as for baking rusks. Brush with the egg and water mixture and bake for about 1-1 1/2 hours until risen and golden brown. Allow to cool slightly and serve lukewarm or at room temperature. Makes 12-15 rolls
