Ingredients (13)

sunflower oil — or butter, for frying
1.00 onion — large, chopped
3.00 garlic — cloves, crushed
410.00 g tomatoes — chopped
500.00 ml stock — chicken
1.00 bay leaves
2.00 cloves
4.00 black peppercorns
5.00 ml sugar
350.00 g fish fillets — white flesh
marinara mix
65.00 ml brandy
salt and freshly ground black pepper — to taste
250.00 ml cream — thick

Method:

Heat butter and oil. Add onion and garlic and sauté until glossy, about 5 minutes.
Add next 6 ingredients and bring to boil.
Reduce heat, add fish and simmer for 10 minutes. Add marinara mix and brandy and cook for about 3 minutes. (Seafood only needs a few minutes to cook. Too long and it will become tough and rubbery.)
Season to taste, stir in cream, if desired, and serve with crusty white or brown bread.
