Heart warming split pea soup

    butter or margarine
  • bunch of chives, finely chopped
  • 1
    onion, finely chopped
  • 2
    garlic cloves, crushed
  • 2
    (8 cups) chicken stock
  • 250
    (1 cup) split peas, soaked overnight in water
  • 1
    medium potato, peeled and diced
  • 1
    large tomato, peeled and diced
  • 1
    stalk celery, sliced
  • 2
    carrots, sliced
  • 15
    (1T) fresh parsley, chopped
  • Salt and pepper to taste

1.In a deep soup pot, melt butter and sauté chives, onions and garlic. Add chicken stock and peas (with the water that the peas were soaked in).
2.Bring to the boil. Reduce heat and simmer, adding more water if needed. Cook peas until tender.
3.Add all remaining ingredients, continue cooking for 20 minutes until peas and vegetables are tender, purée soup in a blender or rub through sieve until smooth.
4.Pour back into saucepan and heat through. Season to taste and garnish with croutons, fresh cream and chopped parsley.
5. Serve hot with mini pita bread.
