Hawaiian pasta salad

  • 250
    elbow macaroni
  • 2
    chicken breast fillets, diced
  • 150
  • 2
    chilli and garlic sauce
  • 1
    clove garlic, crushed
  • 2
    chives, finely chopped
  • 1
    green pepper, seeded and diced
  • 2
    stalks celery, chopped
  • 4
    pineapple rings, cut into pieces
  • 3
    fresh mushrooms, sliced (optional)
  • salt and freshly ground black pepper


Cook the macaroni in rapidly boiling salted water until tender. Drain well and set aside. Season the diced chicken with salt and pepper. Fry in oil until done and remove from the pan. Mix with the macaroni and mayonnaise and add the chilli and garlic sauce and crushed garlic. Transfer to a pretty serving platter. Sprinkle the chives, green pepper, celery, pineapple and mushrooms on top and season with salt and pepper to taste. Chill until needed. Serves 4.
