Ingredients (11)

400.00 g rice — uncooked
12.00 ml oil — or margarine
1.00 onion — chopped
1.00 green pepper — deseeded and sliced into strips
440.00 g pineapple — cut into chunks
salt
freshly ground black pepper
fresh thyme
lemon juice
turmeric — ground, pinch
210.00 g mussels — smoked

Method:

Boil the rice in salted water, drain and set aside. Heat the oil or margarine in a pan and fry the onion and green pepper until soft. Add the pineapple pieces and fry for a few minutes. Add the rice, seasonings to taste, and turmeric to enhance the colour of the mixture. Finally, add the mussels and heat through. Serve with fried fish.
