Hand- raised chicken

  • 1
    large chicken
  • 2
    onions, sliced
  • 45
    fresh mixed herbs, chopped
  • 15
  • 1
    chicken stock
  • salt and pepper to taste


1. Prepare chicken and place in a large heavy based saucepan.
2. Add all remaining ingredients, bring to a boil, turn down the heat, cover saucepan tightly, simmer very gently for 3 hours.
3. Turn chicken occasionally and replenish with stock when necessary. (The secret is not to rush the chicken, but to cook it slowly until tender).
4. Serve warm with steamed dumplings or samp and beans.
