Ham and mustard pitas

    pita breads
  • 250
  • 50
    wholegrain French mustard (use more as needed)
  • salt and freshly ground black pepper
  • green lettuce leaves
  • 350
    gammon, sliced
  • 4
    spring onions, sliced
  • 125
    cocktail tomatoes


Slice pita bread into halves to form two pockets. Flavour mayonnaise with mustard, salt and black pepper. Break lettuce up and line pita pockets with lettuce, sliced gammon, sliced spring onions and halved cocktail tomatoes. Moisten each pocket with enough mustard mayonnaise. For a delicious alternative, use mushrooms, bean sprouts, and sliced hard-boiled egg.
