12.00 leeks
12.00 ham — slices
30.00 ml butter — or margerine
50.00 ml flour — cake
500.00 ml milk
salt
freshly ground black pepper
150.00 g cheddar cheese — grated

Method:

Switch on the oven grill. Trim the leeks, remove any tough outer leaves and slice the leeks lengthwise, half way through. Fold open and wash thoroughly under cold running water to remove sand. Boil until tender and drain. Roll a slice of ham round each leek and arrange them next to each other in a flat ovenproof dish. Make a white sauce with the butter or margarine, cake flour and milk, and season to taste with salt and pepper. Add the Cheddar cheese, reserving a little to sprinkle on top. Stir until all the cheese has melted and pour the sauce over the leeks. Sprinkle with remaining cheese and grill until the cheese has melted and the dish is heated through.
Serves 4-6.
