Ham and cheese toasties

  • butter
  • 12
    slices white bread
  • Dijon mustard
  • 6
    slices each, smoked ham and cheese
  • olive oil
  • 6
    extra-large eggs


Butter each slice of bread and spread with the Dijon mustard. Top six of the slices of bread with the ham and cheese slices, and cover with the remaining slices of bread to make sandwiches. Heat the olive oil in a pan and fry the sandwiches until brown on both sides. Transfer the sandwiches to a baking sheet and keep warm. Just before serving, fry the eggs sunny side up. Cut each sandwich in half diagonally and serve topped with a fried egg.
