Ingredients (13)

6.00 pita breads
300.00 g gammon — cubed
200.00 g emmenthal cheese — cubed
60.00 ml fresh basil — chopped
tomato sauce
1.00 onion — medium
25.00 ml fresh chillies — 573
3.00 tomatoes — large
75.00 ml tomato purée
5.00 ml sugar
salt and freshly ground black pepper
1.00 bay leaves
1.00 fresh thyme

Method:

To prepare tomato base, chop and slowly cook the onion in oil until transparent.
Skin, seed and chop tomatoes, add together with purée, seasonings and herbs. Simmer gently without lid until thick and reduced, then push through a metal sieve or purée in a food processor.
Spread the mixture thickly onto each pita base, sprinkle generously with cubed gammon, cheese and herbs.
Brown in a hot oven (200 ºC) for 6 to 8 minutes.
