Ingredients (10)

800.00 g hake — frozen fillets
30.00 ml butter
1.00 onion — finely chopped
250.00 ml carrots — grated
250.00 ml rice — white or brown, cooked
30.00 ml pecan nuts — chopped
125.00 ml cheddar cheese — grated
30.00 ml cheese — spread
2.00 ml salt
5.00 ml dried mixed herbs

Method:

Preheat the oven to 200 ºC and butter a shallow oven dish. Remove the skin of the frozen fillets and arrange the fish portions in the prepared dish.
Sauté the onion and carrots in heated butter until tender. Remove from the stove and stir in the rice, chopped nuts, cheese, cheese spread, salt and herbs. Spoon the rice mixture on top of the fillets and bake for 30-40 minutes or until the fish is done and flakes easily with a fork. Cool slightly and serve with green vegetables and buttered baby potatoes if desired.
Serves 4-6.
