Ingredients (10)

1.00 onion — finely chopped
oil
500.00 ml hake — cooked, flaked
1.00 tomatoes — finely chopped
2.00 eggs — extra large, hard-boiled, finely chopped
30.00 ml fresh parsley — finely chopped
500.00 ml rice — cooked
sea salt and freshly ground black pepper
30.00 ml margarine
breadcrumbs — fresh

Method:

Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray.
Fry the onion in a little oil until tender. Mix the onion, fish, tomato, eggs, parsley and rice in a mixing bowl. Season with salt and black pepper to taste. Spoon into the dish. Dot with margarine and sprinkle with breadcrumbs. Bake for about 15 minutes until golden brown on top. Serve with lemon wedges.
The dish may also be served cold with mayonnaise.
Serves 3.
