Ingredients (9)

8.00 pancetta — or bacon rashers
4.00 hake fillets
250.00 g button mushrooms
0.00 salt and freshly ground black pepper
2.00 garlic — cloves, crushed
60.00 ml fresh chillies — 573
15.00 ml fresh herbs — parsley, oregano or thyme
30.00 ml lemon juice
2.00 avocados, peeled and diced — peeled and cubed

Method:

Preheat oven to 180 °C.
Arrange the pancetta on a baking sheet and crisp in the oven. Remove and set aside to cool.
Place the fish and mushrooms on the same baking sheet and season with salt and pepper.
Blend the garlic, olive oil, herbs and lemon juice and drizzle over the fish and mushrooms.
Roast for seven to eight minutes or until the fish flakes easily with a fork. Take care not to overcook the fish.
Divide the mushrooms and avocado among four plates and place a portion of fish on top.
Garnish with crisply fried pancetta and drizzle with the remaining cooking juices.
