Ingredients (10)

500.00 g hake
salt and freshly ground black pepper — to taste
500.00 g broccoli — broken into florets
50.00 ml butter
50.00 ml flour — cake
500.00 ml milk — lukewarm
75.00 ml orange juice
oranges — grated rind
2.00 ml fresh dill
breadcrumbs

Method:

Preheat the oven to 180 ºC (350 ºF).
Season the hake with salt and black pepper and poach in a little water till done and flakes easily. Drain and flake with a fork.
Boil the broccoli in a little water till just soft. Drain well. Arrange the broccoli in a greased oven dish. Top with the flaked fish.
Prepare a white sauce: Melt the butter in a saucepan and add the cake flour. Stir to form a smooth paste and heat, stirring continuously till the flour is cooked. Remove from the heat and add small quantities of the milk at a time. Return the mixture to the stove and heat till it comes to the boil and thickens. Stir continuously. Remove from the heat and add the orange juice and rind, salt, pepper and dill. Mix well. Pour over the broccoli and fish and sprinkle with bread crumbs. Bake for about 20 minutes or till the breadcrumbs begin to brown and the dish is heated through.
Serve with a salad or bread.
Serves 4-6.
