Haddock pie

    large leek, well-rinsed and sliced

    skinless haddock fillets, cubed
  • 3

    packet cream of mushroom soup powder
  • 1
    lemon, zest and juice
  • 1
    packet instant potato mix


40 minutes
Melt butter in a saucepan, add leek and cook until softened.
Remove from the heat and place in a large ovenproof casserole dish.
Add the haddock to the leeks and sprinkle with paprika.
Mix the soup powder and 550 ml cold water in a saucepan.
Bring to the boil, stirring until thickened.
Add lemon juice and zest then pour over the haddock and season to taste.
Prepare instant potato mix according to packet instructions and spoon on top of the haddock and leek mixture.
Bake in a preheated 180 °C oven for 30 to 35 minutes or until golden.
