Ingredients (8)

450.00 g haddock — smoked, chopped
sea salt and freshly ground black pepper
30.00 ml lemon juice
2.00 onions — sliced
45.00 ml fresh coriander — chopped
4.00 tomatoes — skinned and sliced
30.00 ml parmesan cheese — freshly grated
60.00 ml breadcrumbs — white

Method:

Season the haddock with salt, pepper and lemon juice. Place in a greased ovenproof dish. Scatter onions and coriander over the fish and cover with a layer of tomato slices. Mix the cheese and breadcrumbs together and sprinkle over the tomato slices. Bake in preheated oven for 30 minutes until crust is golden brown.

Cooking time: 30 minutes
Oven temperature: 180 ºC
