Haddock and tomato bake

    smoked haddock, cut into bite-size pieces
  • salt and freshly ground black pepper

    lemon juice
  • 2
    small onions, sliced
  • 45
    freshly chopped coriander
  • 4
    tomatoes, skinned and sliced
  • 30
    freshly grated Parmesan cheese
  • 60
    fresh white breadcrumbs

Season the haddock with salt, pepper and lemon juice. Place in a greased ovenproof dish. Scatter onions and coriander over the fish and cover with a layer of tomato slices. Mix the cheese and breadcrumbs together and sprinkle over the tomato slices. Bake in preheated oven for 30 minutes until crust is golden brown. Serves: 4 Preparation time: 15 minutes Cooking time: 30 minutes Oven temperature: 180 ºC
