Haddock and poached eggs on mashed potato

Ingredients (8)

4 potatoes — peeled, boiled and mashed
30 ml butter
200 ml cream — fresh
salt and freshly ground black pepper — to taste
4 haddock — smoked fillets
200 ml milk
2 eggs — large
fresh chives — handful, chopped

Method:

To make the mash, put the hot mashed potatoes into a mixing bowl and add the rest of the ingredients. Stir to mix well and keep warm until ready to serve.
Lay the haddock fillets in a shallow microwaveable dish and pour the milk over to half cover. Cover with plastic wrap and microwave on High until the haddock flesh flakes easily, for about 4 – 5 minutes.  Meanwhile, get a pan of water to a simmer for the eggs.
Crack the eggs into the simmering water and poach until the whites are set, but the yolks are still soft, for about 1 – 2 minutes.
Serve the fish topped with the mash; poached egg and chives while still warm.
