Guinness soda bread

According to Irish lore, you should prick each corner of the bread to let the fairies out.

Ingredients (8)

3 cup flour — cake
3 Tbs sugar
1 Tbs Baking powder
1 tsp salt
1 cup cheddar cheese — grated
60 ml fresh chives — chopped
60 g butter — melted
400 ml beer — Guinness

Method:

Preheat oven to 180°C. Line and grease a baking tray with baking paper.

Combine flour, sugar, baking powder and salt in a large mixing bowl. Stir in ¾ of the cheese, all the chives and melted butter.

Add Guinness to dry ingredients and stir quickly until a soft, wet dough forms – be careful not to overmix.

Shape dough into a round loaf and place on baking tray. Scatter over remaining cheese, cut a cross in the dough and use a knife tip to prick each corner.

Bake for 45 minutes or until a skewer inserted near the centre comes out clean.
