Ingredients (14)

1 cup butter
180 ml cocoa powder
250 ml beer — Guinness
340 g flour — cake, sifted
2 tsp Baking powder
2 tsp Bicarbonate of soda
2 cup castor sugar
1 Tbs vanilla — extract
3 eggs — extra-large
1 cup sour cream
For the icing:
1 cream cheese — tub
75 g icing sugar — sifted
1 Tbs lemon juice
30 ml water — hot

Method:

Preheat oven to 180°C. Melt butter, cocoa and Guinness in a small saucepan and set aside for 5 minutes.

Mix flour, baking powder, bicarbonate of soda and sugar in a large bowl.

Add vanilla, eggs and sour cream to Guinness mixture and beat into dry ingredients to form a thick, smooth batter.

Pour into a greased and lined 25cm angel food pan or bundt cake tin and bake for 1 hour or until a skewer inserted into the centre of the cake comes out clean.

Icing: Beat cream cheese with icing sugar and lemon juice. Add hot water and beat until smooth. Ice cake as soon as it’s cooled.
