Guinness and honey-glazed pork shoulder

A great take on a pork roast. This delicious glaze works well with chicken too.

Ingredients (7)

375 ml beer — Guinness
125 ml honey
250 g treacle sugar
1 salt and freshly ground black pepper
2 kg pork — shoulder
5 potatoes — peeled and halved
1 carrots — halved lengthways

Method:

To make the glaze:

Place Guinness, honey and sugar into a pan.

Reduce by almost half to form a sweet syrupy glaze, then allow to cool.

Directions:

Heat oven to 200°C.

Season pork, place on a baking tray and roast for 20 minutes, then reduce heat to 180°C.

Remove pork from oven and brush with glaze.

Cook for a further 40-50 minutes, basting meat occasionally until glaze has caramelised.

Add potatoes and carrots to pan, drizzle with a little olive oil and return to oven for a further 35-40 minutes or until potatoes are cooked through.

Remove pork from roasting tray and rest for 15 minutes before serving.
