Guacamole bites

    small ripe avocados, skinned, stoned and cubed
  • 30
    fresh lemon juice
  • 1
    red chilli (or more to taste)
  • handful fresh coriander, chopped
  • 1
    small clove garlic, crushed
  • salt and freshly ground black pepper
  • 24
    baked mini pastry shells or rounds of toast

    sour cream
  • 6
    rashers bacon, grilled until crisp


Mash the avocado, lemon juice, chillies, coriander and garlic together with a fork. Season to taste. Fill each pastry shell or top each round of toast with a spoonful each of quacamole and sour cream. Cut the bacon into small pieces and place on top. Serve immediately.
