Groundnut soup

    groundnut paste or peanut butter

    vegetable stock

    tomato purée

    onion, chopped

    crushed fresh ginger

    dried thyme

  • salt and cayenne pepper

    medium sweet potatoes, peeled and diced
  • 10
    small okra, trimmed and sliced


Place groundnut paste or peanut butter in a bowl and pour in 300 ml stock and tomato purée. Blend until smooth. Spoon nut mixture into a saucepan, add onion, ginger, thyme, bay leaf, salt, chilli and remaining stock.
Bring to the boil, turn down heat and simmer gently for 1 hour, stirring frequently. Add sweet potato cubes, cook for a further 10 minutes, add okra, simmer until both are tender.
Serve immediately with buttered bread or rolls.
