Ingredients (11)

6.00 tuna — steaks
SALSA
410.00 g sweetcorn — tinned, drained
5.00 ml turmeric
20.00 ml fresh parsley — chopped
30.00 ml fresh coriander — chopped
2.00 garlic — cloves, crushed
5.00 ml paprika
5.00 ml cayenne pepper
45.00 ml lemon juice
400.00 g tomatoes — puréed
salt and freshly ground black pepper

Method:

SALSA: Mix all ingredients, seasoning taste with salt and pepper. Refrigerate until ready to serve.
TUNA: Heat oil in a frying pan and fry tuna steaks (150-200 g each) for 3 minutes on each side, or until cooked. Test with a fork: tuna flesh should flake easily.
Serve with a dollop of salsa and turmeric couscous.
