Ingredients (8)

30.00 ml fresh chillies — 573
8.00 sausages — pork
2.00 leeks — washed and chopped
6.00 sweet potatoes — peeled, chopped
3.00 garlic — cloves, peeled
3.00 parsnips — peeled and chopped
0.00 sea salt and freshly ground black pepper
0.00 olive oil — extra virgin

Method:

Heat the oil in a frying pan and fry the sausages on all sides until golden brown. Remove from the
pan. (Alternatively, grill the sausages in the oven.)
Stir-fry the leeks for about five minutes or until softened.
To make the mash, boil sweet potatoes, garlic and parsnips together until soft. Mash with a potato masher, season and drizzle over olive oil.
Spoon mash onto warmed plates and top with sausages and leeks.
