Grilled potatoes

    extra-large potatoes
  • 6
    cloves garlic, crushed
  • 75
    olive or sunflower oil
  • coarse cooking salt
  • milled black pepper
  • 6
    lemon thyme or origanum leaves
  • 2
    chilli flakes


Peel and slice each potato lengthways and cut each slice into 3-4 wedges. Butter a large shallow oven-to-table dish and line with potatoes. Sprinkle with garlic, olive oil, seasoning, herbs and chilli flakes. Add water to half-cover potatoes (or fill base to about 1 cm deep with water). Bake, covered with foil or a lid, at 180 ºC for 45 minutes. Uncover and place directly under hot grill, turning potatoes from time to time, until crisp and golden.
