Ingredients (13)

4.00 pork chops
MARINADE
2.00 garlic — cloves, crushed
1.00 onion — small, chopped
15.00 ml castor sugar
3.00 lemongrass — stalks, chopped
15.00 ml fish sauce
SAUCE
2.00 garlic — cloves, crushed
1.00 red chilli — sliced
30.00 ml sugar
1.00 cm fresh ginger — julienned
1.00 lime — or lemon, juice only
60.00 ml vinegar — cider
60.00 ml fish sauce

Method:

MARINADE
Pound garlic, onion and sugar to a paste in a mortar. Add lemon grass and pound. Add fish sauce and mix with salt and pepper to taste. Spoon over chops and leave to marinate for at least 1 hour or overnight, turning occasionally.
SAUCE
Pound garlic, chilli and sugar to a paste. Stir in remaining ingredients, plus 45 ml water.
Cook chops under preheated grill or braai for about 5 minutes on each side, depending on thickness, until cooked through and beginning to brown. Serve immediately with sauce and blanched pak-choi. Serves 4.
