2.00 Litres water
0.00 salt
5.00 ml turmeric
500.00 ml maize meal
65.00 ml fresh parsley — chopped
8.00 beef — olives
125.00 ml flour
80.00 ml oil
2.00 onions — large, chopped
1.00 garlic — cloves, crushed
115.00 mg tomato paste
250.00 ml wine — dry red
30.00 ml brown sugar

Method:

Pre-heat oven to 180 ºC. Bring water to the boil and add a pinch of salt and turmeric. Mix maize-meal with enough cold water to form a paste. Stir into boiling water with parsley. Using a wooden spoon, stir until mixture is well blended, but still soft. Cook over gentle heat for 20 minutes, stirring occasionally. Spoon porridge mixture into a greased Swiss roll-type baking sheet and smooth top. Leave in a cool place to set. When set, cut into squares or triangles, heat oil and shallow-fry on both sides until crisp. For the beef olives: Coat beef olives in seasoned flour and reserve the remaining flour. Heat oil and fry meat until well browned. Remove from pan and place in a casserole dish. Add onions and garlic to pan and sauté until transparent, then add remaining ingredients and cook for
2 minutes. Pour sauce over meat and cover with lid. Bake for 60 minutes, or until meat is tender. If necessary, stir in remaining flour to thicken and cook over a low heat for 2 minutes.
