Snap each wing at the joint and thread onto a skewer. Pour your favourite marinade over the wings, sprinkle with a little peri-peri, add a sprig of fresh rosemary and leave for about 30 minutes.
Grill high above the coals until done.
Serve hot or cold with the plum and pear mustard (see recipe).
