Grilled caprese sandwich

  • 8
    slices white farmhouse bread
  • 16
    slices mozzarella cheese
  • 4
    ripe tomatoes, sliced
  • 30
    basil pesto
  • butter for spreading
  • black olives and coarse black pepper to serve


Place 4 slices of bread on a work surface, cover each with a layer of cheese, top with tomato and then a generous spread of basil pesto. Top with the remaining slices of bread. Butter both outer sides of the sandwich. Heat a large frying pan. Place sandwiches in frying pan, press down with a spatula and cook until golden brown on both sides and cheese is oozing (about 3 minutes per side). While hot, cut in half and serve with black olives and coarse black pepper.
