Grilled brinjal and blue cheese sandwich

This gourmet sandwich with brinjal, blue cheese and tomato will put a smile on anyone’s face.

Ingredients (7)

1.00 aubergine — large
90.00 ml fresh chillies — 573
2.00 tomatoes — diced
0.00 cucumber — diced
30.00 ml fresh dill — or mint, chopped
125.00 g blue cheese — crumbled
1.00 lemon juice

Method:

Slice brinjal lengthways into 4. Heat oil and fry brinjal slices on both sides until tender and golden. Remove and keep warm.
Toss other vegetables and herbs, then mix in cheese.
Place a brinjal slice on each plate. Divide cheese mixture between the 2 slices. Top each with a remaining brinjal slice.
Serve with a good squeeze of lemon juice. (Heat of brinjal will melt cheese.)
