Ingredients (13)

800.00 g fish — fillets
30.00 ml breadcrumbs
45.00 ml parmesan cheese
15.00 ml fresh coriander — chopped
cayenne pepper — pinch
1.00 lime — zest only
15.00 ml butter
TARTARE SAUCE
200.00 ml mayonnaise
10.00 ml fresh lime juice
15.00 ml capers — chopped
4.00 gherkins — chopped
15.00 ml fresh coriander
5.00 ml mustard — powder

Method:

Wash and dry fillets, and place in a baking pan.
TARTARE SAUCE: mix all ingredients together and spread over the fish. Season.
Mix the breadcrumbs, cheese, coriander, cayenne and lime rind together and sprinkle over fish. Dot with butter.
Place the fish about 15-20 cm from preheated grill and cook 10-15 minutes, depending on thickness. It should be just cooked and the topping crisp and golden.
Serve with new potatoes and green salad.
