Grilled Camembert cheese with salad

  • 45
    olive or walnut oil
  • 15
    red wine vinegar
  • 5
    wholegrain mustard
  • salt and freshly ground black pepper
  • 600
    round Camembert cheeses
  • variety of lettuce leaves
  • 1
    avocado pear, peeled, sliced and lightly sprinkled with lemon juice
  • 6
    walnut halves


Blend the salad dressing ingredients and set aside until needed. Cut the cheeses in half widthways. Place on a baking sheet with the cut sides facing up. Set aside until needed. Arrange the lettuce leaves on six side plates. Arrange the avocado slices around the edges. Chill until needed. Switch on the oven grill just before serving and grill the cheese rounds for a few minutes only or until just beginning to melt. Transfer to the prepared side plates and place a walnut half on each round. Pour over a little salad dressing and serve immediately Serves 6.
