Griddle cakes

  • 600
    cake flour
  • 5
    instant yeast
  • lukewarm water


Mix the cake flour and yeast together and add just enough water to form a soft dough. Knead the dough for about 15 minutes until smooth and elastic, place in a greased bowl and leave in a warm place to rise until double in volume. Punch down gently and shape into small balls. Leave to rise once more before placing on the grill over medium-hot coals. Grill until done, turning the cake occasionally. Serve with fruit preserve. Makes 20 small griddle cakes.
