  • 30
    fresh parsley, finely chopped
  • 2
    cloves garlic, finely chopped
  • 5
    finely grated lemon rend
  • salt and freshly ground black pepper


Mix everything together and sprinkle over stews, grilled meat, salads and even mashed potatoes. Orange rind can be used instead of the lemon rind, and thyme instead of the parsley. A spoonful of finely chopped walnuts adds extra body and flavour to the gremolata. Makes 45 ml (3 T).
