Ingredients (4)

30.00 ml fresh parsley — finely chopped
2.00 garlic — cloves, finely chopped
5.00 ml lemon — zest only
sea salt and freshly ground black pepper

Method:

Mix everything together and sprinkle over stews, grilled meat, salads and even mashed potatoes. Orange rind can be used instead of the lemon rind, and thyme instead of the parsley. A spoonful of finely chopped walnuts adds extra body and flavour to the gremolata.
Makes 45 ml (3 T).
