Ingredients (9)

200.00 g salad greens
24.00 asparagus — trimmed
30.00 ml parmesan — shavings
6.00 radishes — with tops on
The dressing: walnut or hazelnut oil
15.00 ml fresh chillies — 573
30.00 ml lemon juice — fresh
15.00 ml wholegrain mustard
15.00 ml yoghurt — fat-free
5.00 ml sea salt and freshly ground black pepper

Method:

Steam asparagus until tender. Refresh them in cold water and drain. Toss with salad leaves.

Whisk dressing ingredients together. Drizzle leaves and asparagus with dressing, and toss to coat.

Arrange on individual plates and top with long shavings of Parmesan cheese and a radish.
