Green pork curry with egg noodles

Ingredients (11)

1 onion — finely chopped
3 cloves garlic — cloves, finely chopped
2 fresh ginger — finely chopped
50 g green curry paste
500 g pork loin — cubed
handful fresh coriander — chopped
15 ml fish sauce
freshly ground black pepper
1 coconut milk — tinned
noodles — egg
vegetable oil

Method:

Heat a little vegetable oil in a wok, fry onions for 3 minutes or so, add the garlic and the ginger and fry for another minute.

Add the green curry paste and fry another minute.

Add the pork, flavour with the fish sauce and black pepper and fry until the pork has changed colour.

Add the coriander leaves and fry another minute.

Add the coconut milk and bring to the boil, add the egg noodles and stir through, turn down the heat.

Put a lid on the wok and simmer for 3 minutes.
