Ingredients (11)

1.00 papaya — green
4.00 garlic — cloves
15.00 ml shallots — chopped
3.00 red chilli — deseeded and sliced
2.00 ml salt
3.00 green beans — sliced into rings
45.00 ml fish sauce
15.00 ml brown sugar
2.00 limes — juice only
45.00 ml peanuts — roasted and chopped
0.00 red chilli — finely sliced

Method:

First peel the papaya and cut it in half lengthways.
Scrape out the seeds with a spoon and grate the flesh.
Grind the garlic, shallots or spring onions, chilli and salt together in a large pestle and mortar.
Add the beans and lightly crush.
Season with fish sauce, sugar and fresh lime juice.
Transfer salad to a serving dish, sprinkle with crushed peanuts and garnish with sliced red chillis.
