Green beans with fried leeks

    slender green beans, trimmed
  • 250
    baby leeks, trimmed and rinsed
  • 30

    olive oil
  • 2
    dried thyme
  • salt and freshly ground black pepper to taste


1. Cook green beans in salted boiling water until tender, about 6 minutes. Drain and transfer to bowl of ice water to cool. Drain well.
2. Cut off and discard ends from leeks. Cut leeks lengthwise in half, remove peel with paring knife.
3. Melt butter with oil in large frying pan, add leeks and sauté for 1 minute. Reduce heat to medium-low; saut&eactue; for about 10 minutes until leeks are tender. Sprinkle with thyme. Season with salt and pepper.
4. Add green beans to leeks in frying pan, stir over medium-high heat until heated through, about 6 minutes.
5. Check seasoning, transfer to a bowl and serve.
