Ingredients (11)

500.00 g green beans — young, topped and tailed
2.00 bay leaves
10.00 olives — black, pitted, halved
1.00 onion — sliced
1.00 red pepper — deseeded and cut into thin strips
150.00 g feta cheese — cubed
SALAD DRESSING
1.00 lemon — zest and juice
30.00 ml sunflower oil
30.00 ml fresh chillies — 573
freshly ground black pepper — to taste
5.00 ml honey

Method:

Steam the green beans and bay leaves for a few minutes in the microwave oven until tender but still firm, and so the colour is still retained.
Drain well and remove the bay leaves. Mix in the olives, onion and pepper.
Blend all the ingredients for the salad dressing and pour over the salad. Chill for about 4 hours, sprinkle with the feta cheese and serve.
