Ingredients (6)

5.00 onions — large, sliced into rings
1.00 kg green beans — topped and tailed
750.00 ml vinegar — white garpe
7.00 ml mustard — powder
15.00 ml cornflour
750.00 g sugar

Method:

Fill a large saucepan halfway with salted water. Bring to the boil and add the onions. Boil for 20 minutes and drain. Fill the saucepan halfway with fresh salted water once more, bring to the boil and add the onions and green beans (cut into 1,5 cm pieces). Boil for 20 minutes and drain. Use a little of the vinegar and blend the mustard powder and cornflour to a smooth paste. Add the remaining vinegar and sugar to the green bean mixture. Stir well until all the sugar has dissolved. Add the cornflour paste and mix well. Bring to the boil while stirring slowly, reduce the heat and simmer for 15 minutes, uncovered, stirring every now and then. Spoon the pickles into sterilised jars while still hot.
Makes about 1,5 litres.
