Green bean and almond salad

  • 500
    green beans, blanched
  • 125
    tosted almond flakes
  • 1
  • 1
    large, diced avocado
  • olive oil
  • salt and pepper


Blanche halved beans for five to eight minutes until soft but still crunchy.
Toss with the toasted almond flakes, grated lemon zest and avocado.
Dress with lemon juice, olive oil, salt and pepper.
