Greek-style figs on pancakes

  • 5
    ripe figs (see variation)
  • 45
  • 125
    ricotta cheese
  • 10
    fresh mint
  • 4
    hot pancakes (bought, or see Basic pancake batter recipe)


Preheat the oven grill until very hot.
Halve the figs lengthways and place on a baking sheet, cut side facing up.
Drizzle with 15 ml of the honey.
Grill for a few minutes or until golden brown.
Blend the remaining honey with the ricotta and mint.
Spoon a little of the ricotta mixture on each pancake and surround with figs.
Serve immediately.

If fresh figs aren't available use dried ones instead.
Bring to the boil with 15 ml honey, 250 ml port, 2 cinnamon sticks and a strip of orange rind.
Simmer until syrupy.
