Ingredients (13)

500.00 g baby potatoes — scrubbed and halved
salt
12.00 cherry tomatoes — halved
200.00 g baby spinach
200.00 g feta cheese — coarse crumble
45.00 ml pine nuts
20.00 ml fresh mint — chopped
20.00 ml fresh basil — chopped
20.00 ml fresh parsley — chopped
DRESSING
65.00 ml fresh chillies — 573
30.00 ml vinegar — balsamic
salt — pinch
salt and freshly ground black pepper

Method:

Beat all the ingredients for the dressing together and set aside.
Boil the potatoes in salted water until just tender. Drain and pour the salad dressing over the hot potatoes.
Add the tomatoes, baby spinach leaves, feta cheese, pine nuts and herbs.
Mix lightly and serve lukewarm.
