Ingredients (11)

SALAD
800.00 g chicken breast fillets — thinly sliced
1.00 cucumber — sliced
250.00 ml feta cheese — broken into pieces
125.00 ml black olives
sea salt and freshly ground black pepper
SALAD DRESSING
250.00 ml mayonnaise
125.00 ml yoghurt — plain
5.00 ml oregano
fresh parsley — chopped
lettuce
6.00 pita breads — halved

Method:

Fry the chicken in a little oil until brown on the outside and done. Drain on paper towelling and cool. In a bowl, mix the finely sliced chicken with the cucumber, feta and olives. Season with salt and pepper to taste. Blend the mayonnaise and yoghurt and season with origanum and parsley. Pour over the ingredients in the mixing bowl and mix lightly. Arrange a few lettuce leaves in each pita bread and fill with a little of the chicken mixture. Serve immediately.
Serves 4-6.
