Ingredients (6)

4.00 grapefruits — peeled
30.00 ml sugar
30.00 ml water
2.00 hyssop — leaves
1.00 lemon juice
edible flowers — and leaves to garnish

Method:

1. Remove segments from grapefruit by cutting each segment close to the membrane and lifting out the segment. Once the segments have been removed, place them on a plate and squeeze any juice from the membrane over the fruit.
2. Dissolve the sugar in the water an bring to the boil. Simmer for a few minutes, then add in the hyssop leaves and reduce heat. Leave to cool. Add the lemon juice to the syrup, then strain to remove the leaves.
3. Arrange the grapefruit segments in individual fruit bowls or in one large bowl. Pour the syrup over and chill. Decorate the fruit with hyssop flowers and a sprig of hyssop leaf.
