Ingredients (9)

1.00 hubbard squash — or butternut, peeled, diced
5.00 potatoes — peeled and sliced
2.00 onion — finely chopped
oil
250.00 g beef mince
1.00 tomatoes — peeled and finely chopped
200.00 g savoury soya mince — Imana
salt and freshly ground black pepper — to taste
100.00 ml cheddar cheese — grated

Method:

Preheat the oven to 180 ºC. Spray an ovenproof dish with non-stick spray.
Boil the pumpkin in a little water until tender. Season with salt. Boil the potato slices in a little salted water until just tender. Set aside.
Fry the onion in a little oil until tender and translucent. Add the mince and brown. Add the tomato. Prepare the soya mince according to the instructions on the packet. Mix with the mince mixture and simmer for about 15 minutes.
Spoon the pumpkin into the prepared dish, followed by the potato slices and finally the mince mixture. Sprinkle with grated cheese and bake until warmed through and the cheese has melted.
