Gourmet Margherita

12 to 15 minutes
Preheat oven to between 240 and 260 degrees C.
Mix tomatoes, oregano, basil, chilli, olive oil and garlic. Season well.
Roll out four pizzas. Rub the pizzas with a little olive oil and parbake on a floured baking tray or tile for three to four minutes.
Remove and top with tomato mixture.
Add torn pieces of mozzarella and bake for a further six to eight minutes until golden and topping has melted slightly.
Top with rocket and basil leaves and serve immediately.
