Golden bratwurst with crisp potato cakes

Plump sausages with crispy potato cakes - delicious!

Ingredients (6)

5.00 potatoes — peeled, grated
1.00 onion — grated
salt and freshly ground black pepper
2.00 eggs — medium
125.00 ml sunflower oil
4.00 pork bratwurst — (or veal bratwurst)

Method:

Mix potatoes and onion in a bowl. Squeeze out excess liquid, then add seasoning and eggs.
Heat oil in a pan until hot but not smoking. Shape potato mixture into flat cakes and sauté carefully on both sides until crisp and golden brown. Remove from pan and drain on absorbent paper. Keep warm while preparing sausage.
Simmer bratwurst in freshly boiled water until heated through (do not boil) then place on an unheated, lightly oiled, ridged grilling pan. Gradually heat sausages on top of stove until crisp and pale gold.
Serve with potato cakes and a salad of your choice, or with poached or fried eggs (for brunch).
