Goat's milk cheese crostini with summer salad

  • mixed salad leaves of your choice
  • rocket leaves
  • 1
    English cucumber, sliced
  • 12
    baby spring onions
  • 20
    sun-dried tomatoes
  • 8
    slices Italian or French bread
  • 200
    goat's milk cheese
  • olive oil
  • milled black pepper


A trendy and utterly delicious summer option! Salad may be served in one large dish with crostini on the side, or individually. Toss salad leaves and rocket. Add remaining salad ingredients and set aside. Toast one side of bread. Top untoasted side with goat's milk cheese and grill until melted and lightly browned. Drizzle with olive oil and season with pepper. Drizzle salad with you favourite vinaigrette dressing, top with crostini and serve.
