Ingredients (6)

8.00 eggs
90.00 ml water
30.00 ml fresh herbs — chopped
salt and freshly ground black pepper
30.00 ml butter — for frying
150.00 g goat's milk cheese

Method:

Beat eggs, water, fresh herbs, and seasoning together well.
Heat butter in a large pan and pour in egg mixture. When sides begin to set, push cooked egg towards centre. Continue doing this gently, until omelette is half set.
Add slices of cheese and continue to cook until egg is set. If you prefer, when you add cheese you could place omelette under a hot grill to finish cooking.
Garnish with fresh herbs and serve from pan.
